Ingredients

  • 3 large, very ripe bananas
  • 3 large eggs
  • 1/2 cup packed brown sugar
  • 2 cups self-rising flour

Instructions

1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.

2. In a large mixing bowl, mash the very ripe bananas with a fork. A few small lumps are okay.

3. Whisk the three large eggs into the mashed bananas until combined.

4. Add the packed brown sugar and mix until just blended.

5. Add the self-rising flour and mix gently with a spatula only until you no longer see dry streaks of flour. Do not overmix.

6. Gently pour the batter into the prepared loaf pan and smooth the top.

7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

For the best flavor, use very ripe bananas with lots of brown spots. For variations, try folding in a half-cup of chocolate chips or chopped nuts. To add warmth, mix in 1 tsp of cinnamon with the flour. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
