Ingredients
1.5 cups All-purpose flour
1 1/4 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
1 tsp Matcha powder
1 ripe Avocado
1/3 cup Vegetable oil
1/2 cup + 2 tbsp Castor sugar
2 large Eggs
1.5 tsp Vanilla extract
1/2 cup Walnuts, roughly chopped
Instructions
Preheat your oven to 180°C (350°F). Lightly grease and flour an 8″x4″ loaf pan.
In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and matcha powder. Set this bowl aside.
In a large bowl, take your ripe avocado and mash it really well with a fork until it’s smooth and creamy.
To your mashed avocado, add the vegetable oil, castor sugar, eggs, and vanilla extract. Whisk these ingredients together until they are fully combined and the mixture looks smooth and slightly pale.
Pour your wet avocado mixture into the bowl with your dry ingredients. Using a spatula or wooden spoon, mix them until just combined.
Gently fold in the roughly chopped walnuts.
Pour the prepared batter evenly into your greased and floured loaf pan. Optionally, sprinkle a few extra chopped walnuts on top.
Place the loaf pan in your preheated oven and bake for 50-60 minutes, or until a skewer inserted into the center of the loaf comes out clean.
Once baked, let your matcha avocado loaf cool in the pan for about 10-15 minutes. Then, carefully turn it out onto a wire cooling rack to cool completely before slicing and serving.
Notes
Use a ripe avocado that’s soft but not mushy for the best texture and moisture.
Do not overmix the batter to avoid a tough loaf; mix until just combined.
Use good quality ceremonial or culinary grade matcha for best color and taste.
Oil substitutions: canola, grapeseed, or melted unsalted butter.
Nut substitutions: pecans, almonds, or chocolate chips.
Sugar substitution: granulated sugar.
Recipe variations: Add lemon/lime zest, shredded coconut, white/dark chocolate chips/chunks, ground or fresh ginger.
Nut-free version: Omit walnuts; can add pumpkin or sunflower seeds for crunch.
