A wonderfully moist, tender loaf bursting with sweet bananas and juicy blueberries. This delightful quick bread is perfect for breakfast, snacks, or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup granulated sugar
- 1/4 cup butter, softened
- 1 cup mashed ripe bananas
- 2 large eggs
- 1/3 cup vanilla or plain yogurt
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh blueberries
- Cooking spray
Instructions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly coat an 8 1/2 x 4 1/2-inch loaf pan with cooking spray.
2. In a medium-sized bowl, whisk together the 2 cups of all-purpose flour, baking soda, and kosher salt.
3. In a large mixing bowl, combine the granulated sugar and the softened butter. Using a mixer, beat them together at medium speed for about 1 minute until light, fluffy, and blended.
4. To your creamed butter and sugar, add the mashed ripe bananas, eggs, vanilla or plain yogurt, and vanilla extract. Beat until all these wet ingredients are fully blended.
5. Gently add your dry flour mixture to the wet ingredients. Beat at a low speed just until everything is moist and combined. Do not overmix.
6. Place the 1 1/2 cups of fresh blueberries in a small bowl with the extra 1 tablespoon of flour. Toss them gently to coat.
7. Carefully fold the floured blueberries into your batter. Then, spoon the batter evenly into your prepared loaf pan. Press a few additional blueberries into the very top for decoration.
8. Bake for 60-70 minutes, or until a wooden pick inserted directly into the center of the loaf comes out clean.
9. Once baked, take the loaf pan out of the oven. Let the bread cool for 10 minutes right in the pan on a wire rack.
10. Carefully remove the baked blueberry banana bread from the pan and place it directly onto the wire rack. Let it cool completely before slicing.
Notes
Chef’s Secrets: Use very ripe bananas for sweetness and moisture. Don’t overmix the batter to avoid a tough loaf. Coat blueberries in flour to prevent sinking. Melted coconut oil can substitute butter for a richer taste.
Recipe Variations: Add a streusel topping (1/4 cup flour, 2 tbsp sugar, 1/4 tsp cinnamon, 1 1/2 tbsp cold butter until crumbly). Include 1-2 teaspoons of lemon or orange zest. Fold in 1/2 cup chopped walnuts, pecans, or almonds. Swap half the blueberries for raspberries or blackberries. Add white or semi-sweet chocolate chips.
