This cottage cheese banana bread is moist, rich, and easy to make — the perfect quick bread for breakfast, snack, or dessert!
Ingredients
- 2 cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon (optional)
- 4 very ripe bananas
- ½ cup cottage cheese (full-fat or low-fat)
- 1 cup granulated sugar
- 2 large eggs
- ⅓ cup vegetable oil (or melted unsalted butter)
- 1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, salt, and optional cinnamon.
3. In a large bowl, mash ripe bananas until mostly smooth.
4. Add cottage cheese, sugar, eggs, oil (or butter), and vanilla to the mashed bananas. Stir well.
5. Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
6. Pour batter into prepared loaf pan and spread evenly.
7. Bake for 50–65 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
8. Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for best flavor. Avoid overmixing to keep the loaf tender. Add-ins like chocolate chips, nuts, or dried fruit can be included for variety.
