A delightful, easy-to-bake quick bread balancing sweet ripe bananas, zesty orange, and tart cranberries. This gluten-free recipe creates a moist, flavorful loaf perfect for any occasion.
Ingredients
- 1/3 cup olive oil
- 1/2 cup coconut sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 3 ripe bananas, mashed
- Zest from 1 orange (1.5 teaspoons)
- Juice from one orange (1/4 to 1/3 cup)
- 1 1/4 cups almond flour
- 1/2 cup tapioca flour
- 2 Tablespoons coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup fresh cranberries
Instructions
1. Preheat your oven to 350 degrees F (175°C). Grease a 9×5 inch loaf pan thoroughly and line it with parchment paper, leaving an overhang on the sides for easy lifting.
2. In a large mixing bowl, whisk together the olive oil and coconut sugar (or maple sugar) until well combined. Add the eggs, vanilla extract, mashed bananas, orange zest, and orange juice. Whisk until smooth and well blended.
3. In a separate medium-sized bowl, combine the almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon. Mix with a fork until thoroughly blended.
4. Pour the dry ingredient mix into the wet ingredient bowl. Stir gently until just combined, being careful not to overmix. A few lumps are fine.
5. Gently fold in the fresh cranberries, distributing them throughout the batter without crushing them. (Optional tip: toss cranberries with 1 Tbsp of flour first to prevent sinking).
6. Pour the banana bread batter into your prepared loaf pan. Bake for 45-55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean (a few moist crumbs are acceptable).
7. Once baked, let the cranberry orange banana bread cool in the pan for 10-15 minutes. Carefully lift it out using the parchment paper handles and transfer it to a wire rack to cool completely before slicing.
Notes
Variations: Add 1/2 cup chopped walnuts or pecans, or 1/2 cup white chocolate chips. Add 1/4 teaspoon ground nutmeg or allspice for warm spice. Drizzle with an orange glaze made from powdered sugar and orange juice. Dried cranberries can be used if plumped in hot water/orange juice.
