  • 2 cups cold heavy cream
  • 1 teaspoon vanilla extract

Instructions

1. Place a freezer-safe container (like a 9×5 inch loaf pan) in your freezer to chill.

2. In a large mixing bowl, combine the creamy peanut butter, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix thoroughly with a whisk or rubber spatula until smooth.

3. In a separate, clean large bowl, pour the cold heavy cream. Using an electric mixer, beat the cream on medium-high speed until it forms stiff peaks.

4. Gently fold about a third of the whipped cream into the peanut butter mixture to lighten it. Then, carefully fold in the remaining whipped cream until everything is just combined, being careful not to overmix.

5. Pour the ice cream mixture into the pre-chilled freezer container. Smooth the top with a spatula.

6. Cover the container tightly with a lid or plastic wrap to prevent ice crystals from forming. Place it in the freezer for at least 6-8 hours, or preferably overnight, to firm up.

7. Once frozen, remove the ice cream from the freezer. If too hard, let it sit on the counter for 5-10 minutes to soften slightly before scooping and serving.
