Description

Shake up a vibrant spicy pineapple margarita! This easy recipe delivers a perfectly balanced, zesty cocktail with sweet pineapple and a delightful chili kick.


Ingredients

  • Kosher salt: 2 tablespoons
  • Granulated sugar: 2 tablespoons
  • Tajín seasoning: 1 tablespoon
  • Tequila: 3 ounces
  • Cointreau or Triple Sec: 1 ounce
  • Spicy simple syrup: 2 teaspoons
  • Fresh pineapple juice: 4 ounces
  • Fresh lime juice: 1 ounce
  • Ice: for shaking and serving
  • Pineapple wedges: for garnish
  • Red chilies or jalapeño slices: for garnish


Instructions

1. On a shallow plate, combine kosher salt, granulated sugar, and Tajín seasoning. Stir well until evenly mixed.

2. Run a lime wedge around the rim of two rocks glasses to moisten.

3. Invert each glass and gently press its rim into the seasoning mixture, rotating for an even coating. Set aside.

4. Fill each rimmed glass with fresh ice cubes.

5. Fill a cocktail shaker halfway with ice.

6. Add tequila, Cointreau or Triple Sec, spicy simple syrup, fresh pineapple juice, and fresh lime juice to the shaker.

7. Fit the shaker lid on tight and shake vigorously for about 15-20 seconds, or until the shaker feels very cold and frosty.

8. Strain the cocktail mixture equally into your prepared, ice-filled glasses.

9. Garnish each spicy pineapple margarita with a fresh pineapple wedge and a small red chili or a thin slice of jalapeño. Enjoy!

Notes

Spicy Simple Syrup Recipe: Combine 1/2 cup water, 1/2 cup granulated sugar, and 1-2 sliced jalapeños (seeds included for more heat) in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and steep for at least 30 minutes. Strain and store in the fridge for up to 2 weeks.

Tequila Choice: Reposado tequila offers a smoother, more complex flavor with hints of vanilla. Blanco tequila provides a sharper agave taste.

Rimming Tip: Always use fresh lime juice, not water, to moisten the rim for better adhesion and flavor.

Variations: Try adding mango puree for a Mango-Pineapple Margarita, muddled strawberries for a Strawberry-Pineapple version, or a splash of passion fruit juice. Adjust chili type and quantity for mild to extra fiery heat.
